Chicken Skewers with Yellow Rice
Equipment
- 1 Dutch oven or large pot with lid
- Metal or wood skewers, be sure to soak wooden skewers!
Ingredients
- 1 lb boneless skinless chicken thighs, or breast, cut into 1" chunks
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 1 clove garlic, peeled and minced
- 2 cups yellow rice, recipe linked below
Instructions
- Combine all ingredients (except for the rice) in a ziploc bag. Marinate the chicken for up to 4 hours in the refrigerator.1 lb boneless skinless chicken thighs, or breast,, 2 tablespoons olive oil, 2 tablespoons soy sauce, 2 tablespoons honey, 1 clove garlic,
- When ready to cook, preheat oven to 400℉, or if using a grill or grill pan, preheat over high heat. Soak wooden skewers in water if using.
- Meanwhile, add chicken pieces to the skewers. Cook for 10 minutes
- Flip skewers and turn oven up to 475℉. Continue to cook until the chicken is done and has some nice color on it. 5-7 minutes.
