Chicken Skewers with Yellow Rice

Tender chunks of chicken thighs (or breast) are marinated, then grilled to perfection on skewers. Equipment

  • 1 Dutch oven or large pot with lid
  • Metal or wood skewers, be sure to soak wooden skewers!

Ingredients
  

  • 1 lb boneless skinless chicken thighs, or breast, cut into 1" chunks
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 1 clove garlic, peeled and minced
  • 2 cups yellow rice, recipe linked below

Instructions
 

  • Combine all ingredients (except for the rice) in a ziploc bag. Marinate the chicken for up to 4 hours in the refrigerator.

  • When ready to cook, preheat oven to 400℉, or if using a grill or grill pan, preheat over high heat. Soak wooden skewers in water if using.
  • Meanwhile, add chicken pieces to the skewers. Cook for 10 minutes
  • Flip skewers and turn oven up to 475℉. Continue to cook until the chicken is done and has some nice color on it. 5-7 minutes.
  • Serve with Yellow Rice and enjoy!

Notes

Yellow rice recipe.
You can use chicken thighs or breast! Cook the same either way, chicken breast are slightly healthier.
Feel free to customize the marinade to your liking, add red pepper flakes for more spice, or some dijon mustard for a nice tang.
We prefer metal skewers that are washable and reusable, they also do not need to be soaked. These OXO skewers work great! Tip: wrap the handle side with aluminum foil to keep from discoloring over time.
