- 1 Dutch Oven or a large pot with lid
Ingredients
- 1 cup rice, any type will work
- 2 cloves garlic, peeled and minced
- 2 shallots, peeled and minced
- 1/2 c cherry tomatoes, halved or quartered
- 2 c good quality stock, chicken or veggie
- 1 TB olive oil
- 1 TB Sazon seasoning, recipe linked below

- Preheat dutch oven on medium-high heat while prepping the veggies
- Add oil to dutch oven, once hot add shallots and garlic, cook for 4-5 minutes.2 cloves garlic,, 2 shallots,, 1 TB olive oil
