Yellow Rice

Equipment

  • 1 Dutch Oven or a large pot with lid

Ingredients
  

  • 1 cup rice, any type will work
  • 2 cloves garlic, peeled and minced
  • 2 shallots, peeled and minced
  • 1/2 c cherry tomatoes, halved or quartered
  • 2 c good quality stock, chicken or veggie
  • 1 TB olive oil
  • 1 TB Sazon seasoning, recipe linked below

Instructions
 

  • Preheat dutch oven on medium-high heat while prepping the veggies
  • Add oil to dutch oven, once hot add shallots and garlic, cook for 4-5 minutes.
    2 cloves garlic,, 2 shallots,, 1 TB olive oil
  • Add cherry tomatoes, seasoning, rice, cook for 3-4 minutes. Brown the rice a little.
    1 cup rice,, 1/2 c cherry tomatoes,, 1 TB Sazon seasoning,
  • Add stock, bring to a boil and once the stock has reduced to just above the top of the rice, cover and put on low heat for 15 minutes. (45 min if using brown rice)
    2 c good quality stock,

Notes

Recipe for Sazon seasoning.
Use a good heavy bottom pot to insure nothing burns. (We use this 6qt Lodge.)
