Add butter to skillet, once melted, add 2 Tablespoons maple syrup, stir to combine.
2 tablespoons butter
Add a single layer of sliced apples to the skillet, get creative with the pattern. It will be visible if you choose.
2 large apples (honey crisp or gala)
Cook until apples start to soften, 5 minutes.
Meanwhile, add oats, and spices to a large mixing bowl. Stir to combine.
2 c old-fashioned rolled oats, 1 teaspoon baking powder, 1 teaspoon ground cinnamon, ¼ teaspoon ground nutmeg, ¾ teaspoon salt
Add the wet ingredients to a separate medium size bowl. Mix well.
¼ cup maple syrup, 1 ½ cup oat milk, 1 large egg, ½ teaspoon vanilla extract, 1/2 c applesauce
Pour wet ingredients into dry, stir to combine until just mixed.
Pour oat mixture over top of apples and place in oven.
Bake until top is brown and oatmeal is set, 35–45 minutes.
When finished, let cool for 5 minutes. If you choose, take a plate and place it on top of the oatmeal. With one hand on the plate, carefully flip the cast iron skillet. Once the plate is back on the counter, slowly pull away the skillet. Enjoy!
