Shrimp & Cannellini Bean Stew with Old Bay Toast

  • 1 Non-stick skillet

Ingredients
  

For the Stew

  • 1 ½ pounds medium to large shrimp, peeled and deveined
  • 2 cans cannellini beans, rinsed and drained
  • 3 roma tomatoes, medium dice
  • 1 medium onion, medium dice
  • 4 cloves garlic, peeled, minced
  • 4 cups good quality chicken stock
  • ½ cup white wine, optional
  • 1 tablespoon olive oil, divided
  • 1/2 teaspoon crushed red pepper flake, optional
  • Salt & pepper, to taste
  • 1.5 tablespoons old bay seasoning, divided

For the Toast

  • 3-6 slices good quality bread
  • 1 Tablespoon mayo, or butter
  • 1 teaspoon old bay seasoning

Instructions
 

  • Toss shrimp in a little olive oil and half the old bay.
    1 ½ pounds medium to large shrimp,
  • Add a drizzle of oil to the dutch oven on medium heat. Once hot, add garlic and shrimp, cook for 1-2 minutes a side. Remove to a plate when mostly opaque but not quite done.
    4 cloves garlic,, 1 tablespoon olive oil,
  • Add the remaining oil, onion, red pepper flake, salt & pepper, and the rest of the old bay to the dutch oven. Cook for 8-10 minutes.
    ½ cup white wine,, 1/2 teaspoon crushed red pepper flake,, Salt & pepper,, 1.5 tablespoons old bay seasoning,, 1 medium onion,
  • Once onion is slightly softened, deglaze with white wine (if using), then add diced tomatoes, stock, and beans. Adjust heat to a slow simmer and cook 7-10 minutes.
    2 cans cannellini beans,, 3 roma tomatoes,, 4 cups good quality chicken stock
  • Make the toast next, when ready to eat add shrimp back in, cook another 2 minutes.
  • Old Bay Toast
  • Heat a saute pan on med-high heat.
  • Coat 1 side of the bread with mayo (or any other bread lube)
    3-6 slices good quality bread, 1 Tablespoon mayo,
  • Sprinkle with old bay, feel free to do both sides if you like the spice.
    1 teaspoon old bay seasoning
  • Cook until nice and golden brown, about 4 minutes a side.

Notes

Variations:
  • Add other seafood such as scallops or mussels to the stew for added flavor and protein.
  • Use different types of beans such as kidney beans or black beans for a change of pace.
  • Add some heat to the stew with some diced jalapeños!
