Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 stalks celery, chopped
  • 3 medium carrots, chopped
  • 3 cloves garlic, minced
  • 6 cups vegetable or chicken broth, homemade if you can
  • 1 cup orzo pasta
  • 2 cups fresh spinach leaves
  • 1 tablespoon dried Italian seasoning
  • Salt and pepper, to taste
  • 1/4 cup grated Parmesan cheese, optional

Instructions
 

  • In a large pot, heat the olive oil over medium heat.

  • Add the chopped onion, celery, garlic, and carrots. Cook until the vegetables are tender, about 8-10 minutes.

  • Add the broth, orzo pasta, Italian seasoning, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 10-12 minutes, or until the orzo is cooked.

  • Stir in the fresh spinach leaves and cook until wilted.
